Summary
After trying a few different webcam mount positions using small clamps, I decided the right end of the x axis was the place for me.
This thing slips neatly over the metal bracked on the Ender 3 S1 Pro, and has a 6.5mm hole through which a standard camera mount screw can be inserted.
Note, I used a screw from the camera screws and nuts library by kijja https://www.thingiverse.com/thing:4763840/files. Specifically, I used CameraScrewL10H19T6 which has a large thumb wheel and a 10mm threaded section.

Print this with the webcam mount arm upwards The design includes supports for printing in this direction - it might get a little bit messy inside the cavities but they're out of sight and it doesn't impact the functionality.
